Orange Mousse cake




Friends were coming over for dinner and here I was fretting over what dessert to make. By now they were pretty familiar with my repertoire so I wanted to come up with something new. But what?? I have always believed in using what is in season, not to say that I’m against frozen or preserved ingredients but the best taste come only with the freshest ingredients. So my mantra is to always to try and use what is in season and then look for other options.

I had a basket full of fresh oranges staring at me in the kitchen and I thought to myself…what’s the best thing I can do with these plump juicy beauties ? I wanted to use every bit of freshness that was piled in the basket…a mousse? But then what about the rind which has all the aroma and the natural oil….why not make an orange cake too? So there it was an orange cake covered in layers of light and fluffy orange mousse..the sweetness of the cake and the tangy mousse compliment each other to perfection.
