THERE IS ALWAYS A SILVER LINING

It was my husband's birthday and we were having a small party at home. I had never baked a cake for his birthday because it always happened to be the day after the govt budget (for all those who don't know, both of us work in a news channel) and I never really had the time. This time was different, the budget was on a Friday and I had 2 days in hand to whip up something.

So, with all good intention I decided to make a decadent chocolate cake with a difference. I got all the ingredients together..the darkest chocolate that I could lay my hands on..the heaviest cream and so on. I am usually very careful with my recipes, I don't tweek them unless I want to experiment and this was not a day I wanted to experiment, I was having guests over! Sometimes the devil gets into us and we end up doing the most inexplicable things..yes I tweeked the recipe! Little did I realize that in my endeavour to make it more delicious I was actually creating a potential disaster but ofcourse I was not to know this till the next day!!!

The next day, like always, my husband asked me when I would be ready for the photo shoot.and pat came the reply, in a few seconds. Little did I know what was in store for me!!!! I took out the mousse cake out of the mould and placed it on a platter. It was as dark a chocolate mousse as one could imagine..smooth as satin it was a sight to behold. My husband needed something so I turned around and when I looked back.lo and behold.where is the cake I freaked out? It had obviously not gone anywhere except that when I put it on the platter it was like a proud lady.nose in the air standing tall and when I looked back suddenly it had aged a 100 years and was lying down..yes, the mousse had collapsed! What am I going to do? The guests are coming in a few hours!!!

As all women, who brave one crisis after another with a brave smile, I decided to make something out of this royal collapse..i went to the kitchen and quickly checked out the ingredients that would compliment this and whipped up a complete new dessert...and VOILA there it was Bailey's Irish Cream Chocolate Mousse cake.

It was a Big Hit and was truly the 'Royal' mess..
